The two containers of gravy from breakfast that had been placed in the walk-in cooler at 11:00 AM still read 80 degrees F at 3:45 PM. Required to be cooled from 135 to 70 degrees F in the first two hours and then down to 40 degrees F during the next 4 hours. The two containers of gravy were discarded at the time of inspection.
