                2. Mop found in bucket, unable to air dry.
                3. Cabinet shelving found chipped, cracked, in disrepair and is being used to store dishware. Is not considered smooth, easily cleanable, durable and non-absorbent. Must repair/replace with a surface that meets the above criteria.
                4. Box of disposable forks found stored in cabinet under handwashing sink plumbing; must store in a clean, dry location where utensils are not subject to incidental contamination. Corrected by voluntary discard of forks.

                    1. Pitcher of milk was 51 degrees F at 8:45 AM and cream cheese was 55 degrees F. (Must hold potentially hazardous foods at 41 degrees F or below.)
                    2. Employee indicated that dishes were being washed and rinsed, but did not indicate they are being sanitized. (Must wash - rinse - sanitize - air dry dishes and utensils.) Must be 50-100 ppm chlorine about 1 teaspoon per gallon of water.
                    Noncritical Violations Found: 6
                    1. Employee could not find chlorine test strips to check sanitizer.
                    2. Moderate ice buildup in bottom of chest freezer.
                    3. Two refrigerators were not clean inside.
                    4. Soap dispenser was empty at upstairs hand sink.
                    5. Cabinets under 3 vat sink are in poor repair.
                    6. Clean utensils were being stored in cabinet that had dust and debris in it.
